Mottra caviar has quickly found favour with top chefs, retailers and customers alike, and not just because of its subtle, not-too-salty flavour.

This farmed caviar is obtained by methods that do not harm the fish, which means that it is a sustainable and ethically sourced food from a traceable source. The fish are given exclusively organic feed and swim in pollution-free water that comes from deep artesian wells, ensuring that it is an entirely natural caviar, with nothing added except salt. The pure, authentic taste will be a revelation to caviar-lovers.

Mottra History

MOTTRA Ltd continues the old tradition of serving Latvian caviar to the British tables. Caviar from Riga, the capital of Latvia, has been served in the Royal Courts of Europe ever since 17th Century.

Established in 2002 MOTTRA farm combines the best of the old traditions with a new environmental and scientific approach, resulting in the production of the purest caviar that will delight the most discerning connoisseur.

Caviar lovers have always suffered from the knowledge that lives of wild breeding sturgeons were terminated to provide this exclusive delicacy, thus consuming caviar from the endangered species is very much at odds with the world concerns on animal welfare and sustainability. Mottra has solved this dilemma with the use of special sturgeon caviar farming techniques that encourage caviar production, whilst putting the welfare of the sturgeon first.
Once the sturgeon is about six or seven years of age it is milked or ‘stripped’ of its eggs, rather than being culled. The sturgeon then put back into the perfect conditions of Mottra’s indoor pools where the fish continues to grow and starts the next process of caviar production.

The Osetra sturgeon (Acipenser Baerii) caviar is the most well-known gourmet caviar. It is prepared by us according to the classical method of preparation.
This is why it grain-to-grain (not mushy) and malossol (meaning ‘slightly salted’ in the Russian language from where the word came from).

The Sterlet sturgeon (Acipenser ruthenus) is one of the smaller species of sturgeon and is now very rare. With small grey-golden sterlet eggs, the Sterlet caviar was once ranked alongside Beluga by the Russian Tsars, Iranian Shahs and Austrian Emperors in the quality ranking, followed by medium-sized eggs of the Osetra Sturgeon and lastly Sevruga.
The fish is very sensitive and it is difficult to farm. Hence its caviar has almost disappeared but Mottra has made it possible for Sterlet caviar to come back to the market.
